Best Classes for Human in BG3?
Human is an "ok" choice for any class, but hardly the best one. Humans in BG3 are a little underwhelming.
Civil Militia gives some pretty good proficiencies like Glaive, and Halbers. The basic spears aren't bad too. It can save you a feat down the line if you're planning this kind of build.
You can't really answer what the best class for Human is... "Some class that wants to use spears but has no martial weapon proficiency"?. "Some kind of build that absolutely pushes one skill into the atmosphere"? haha. There are no inherent class synergies with human, but they're never the wrong choice either.
Almost any race has better use-cases than human. Githyanki, for example has a free mage hand, and a more flexible skill proficiency bonus.
Note that there's no right or wrong answer here, haha. There's always a crazy build out there, flavor or RP, or a plethora of other reasons to choose Human over another with any combination!
Human in BG3 vs. 5e: Differences
Wondering about the main differences of the Human race in Baldurs Gate 3 vs. DnD 5e?
Outside of BG3 the main "nerf" to humans is that not only do they lose their +1 to all stats, all other races (even humans) gain the flex +2/+1. This was pretty much the only reason to go human in the first place, if any, and that doesn't exist anymore.
Added in BG3, Civil Militia isn't part of the baseline human kit. +2 to a Skill Proficiency is part of Variant Human in 5e. Carrying Capacity is a welcome buff in BG3 as well.

Obviously one of the main blanket changes (I mentioned it above), all races in BG3 get a free +2 and +1 to any two stats of choice, as well as racial stat bonuses being removed.
Summary and Closing
That about wraps it up for BG3's Human race!
